It isn’t chicken—and despite its name, City Chicken has never belonged to only one city. It is a beloved regional specialty with deep roots in Pennsylvania, Upstate New York, and the industrial communities surrounding cities such as Pittsburgh, Cleveland, Detroit, Buffalo, and Binghamton. Here in Schuylkill County, it remains a familiar part of Pennsylvania Coal Region cooking.
So, what exactly is City Chicken? It is seasoned meat formed or arranged around a wooden skewer, lightly breaded, and prepared until the outside is beautifully golden and crisp. Its name comes from its resemblance to a small chicken drumstick—not from its ingredients.
A Resourceful Regional Tradition
In many industrial cities, pork and veal were once more accessible and affordable than chicken. Resourceful cooks used those meats to create a satisfying dish that resembled a chicken drumstick. City Chicken became especially popular among working-class and Eastern European immigrant families, eventually finding a lasting place at family tables, neighborhood markets, and community gatherings.
Ground or Chunk: Which Is Better?
City Chicken is commonly prepared in two distinct styles.
Chunk City Chicken places individual pieces of meat along a wooden skewer, giving each bite a heartier, more varied texture. Ground City Chicken uses seasoned minced meat formed around the skewer, producing a tender and consistent interior.
